I don't think they allow knifes in sports... MMA is a sport.

Personally I don't know your level of experience. When fighting it is not normal to grab a fist, especially is that fist has a knife in it.

I don't think this is a great technique. I doubt if many attackers would attack like this. I know that no trained fighter would attack like this.

If you are defending yourself against a knife technique you would likely attack a joint such as a wrist or elbow. The knife is to be avoided, attacked or redirected. This doses take repetitive training. It is best to be supervised by a good instructor when doing this training or any training.
